Redbor Kale – A little nutrient powerhouse

So I scored some organic purple kale this morning at our local farmers market.

 😊 Beautiful antioxidant nutrients in Kale include Beta carotene and Vitamin C.

So what does this all mean?

Firstly, oxidation is a naturally occurring process in our body and is needed for us to function.

However, OVER-production of oxidation can cause excess ROS (Reactive Oxygen Species) which adversely affects our health. It is documented that excess ROS may be one root cause for cardiovascular issues, neurodegeneration and premature aging.

The antioxidant properties in Kale helps to counter and mitigate this process by “scavenging” ROS and reducing oxidative stress in our tissues and organs.

The purple in this variety (Redbor Kale) is high in a phytochemical called Anthocyanins. Anthocyanins have anti-inflammatory actions as well as lots of other wonderful health benefits in the body.

PS Kale is also a good source of Vit K which assists with blood clotting, so please check with your practitioners if you are on medications for blood clotting conditions.
